Banana Blackberry Pancakes
Homemade banana-blackberry pancakes are one of my favorite healthy breakfast items to make! They are simple, easy and you do not have to feel guilty about eating this heart healthy breakfast item. It is full of healthy ingredients and will give you lots of energy.
I have tried all sorts of homemade banana pancake recipes, but this is by far my favorite. I like to combine a few of my favorite recipes to make something of my own. This recipe is the perfect combination of healthy and hearty. I love to make this on the weekends because it is one of my husbands favorite things to eat and it is an easy clean up for me. I hope you enjoy this as much as we have!
Ingredients (makes 6 medium sized pancakes):
2 bananas
1/4 cup blackberries
2 eggs
1/2 teaspoon baking powder
1/4 cup Greek yogurt
1 tablespoon maple syrup
2 tablespoons milk
1 teaspoon vanilla extract
3/4 cup oats
1 teaspoon cinnamon
Honey (we use honey instead of syrup to top our pancakes)
Directions:
First, you will need to combine 1 banana, blackberries, eggs, baking powder, Greek yogurt, maple syrup, milk, vanilla, oats, and cinnamon into a blender.
Once your ingredients are blended together to the point your mixture turns into a liquid, you are ready to start cooking.
Prepare your skillet with Pam spray or coconut oil. You do not want your pan too hot when making your pancakes. I keep mine on medium heat.
You will pour about 1/2 cup of your mixture into your pan to make the perfect sized pancake. Each side will need to cook for about 30-45 seconds. Once you start seeing bubbles in the pancake, it is time to flip it over.
Once all of your pancakes are made, slice your remaining banana and serve on top of your pancake along with your remaining blackberries. I also like to sprinkle a little cinnamon over the top for some extra flavor.
Drizzle pancakes with honey or syrup and enjoy!
